Green Olives-Celery-Mint Salad

Ingredients

400g green olives (stone removed and chopped)

6-7 celery stalks chopped

bunch mint leaves chopped

4 tbsp olive oil

1 tbsp white wine vinegar

salt&pepper

 

Preparation

1.Combine green olives, celery and mint leaves

2. Add vinegar, olive oil and salt&pepper.  Serve solo with foccacia or with grilled fish or with pork belly.
